Yield:
Makes two large quesadillas, serves four.
Quesadilla:
- 4 8" flour tortillas
- 2 cups pulled pork
- 3/4 cup Bob's Bitchin' Original BBQ Sauce
- 1 cup Pico de Gallo (see below)
- 2 cups shredded cheddar and Monterey Jack cheese
- butter or margarine (optional - enhances browning)
- sour cream (optional)
- guacamole (optional)
- salsa (optional)
Lightly butter outsides of flour tortillas, setting two bottoms on flat griddle. Evenly distribute the pulled pork tossed in Bob's Bitchin' Original sauce, then top with pico de gallo to your liking. Top with cheese. Put on top tortilla, and cook on medium high until bottom is browned, then flip over and brown the other side. Cut into eighths. Top with the remaining pico de gallo, sour cream and guacamole.
Pico de Gallo:
- 1 cup diced tomatoes
- 1 tsp fresh minced jalapeño
- 1 diced green onion
- 2 T fresh lime juice
- 1 tsp salt
- 1 T minced fresh cilantro
